Zucchini, lemongrass and avocado salad
Ingredients
1/2 zucchini, cut into ribbons
1/2 Lebanese cucumbers, cut into ribbons
1/2 - 1 cup drumhead cabbage, shredded
1/4 cup of basil or coriander leaves
1 avocado sliced
1/4 cup roasted peanuts
1/4 chilli, thinly sliced
salt to taste
Dressing
1 small lime
1/4 lemongrass stalk (white part only), thinly sliced
1 tablespoon fish sauce
2 teaspoons brown sugar
Method
To make the dressing, place the lime juice, lemongrass, fish sauce and brown sugar in a small bowl and stir until the sugar has dissolved.
Place the zucchini, cucumber, cabbage, herbs, peanuts chilli and avocado into a bowl, pour the dressing over and gently toss to combine.
Serves 2.
