Onion rings
Ingredients
1 onion, peeled and sliced (thick-ish)
1/2 cup almond meal
Ice cubes
3 eggs
1 cup soda water (beer works too)
Spice mix
Salt
1 tbsp paprika
2 tsp cayenne pepper
1 tbsp white pepper, ground (normal black pepper works too)
Method
Whisk the eggs then add in the flour, soda water, pinch salt and ice cubes. Continue whisking to ensure sediment doesn't fall to the bottom (even during frying). Seperate the onion slices.
Combine spices in small seperate bowl and set aside.
In a medium saucepan or even a wok, heat the oil to 180°C. You can test the heat by dropping a small bit of bread crust into the oil. If it starts bubbling furiously then it's ready, if not give it a little more time. If your oil has started to smoke it's too hot!
Use tongs or chopsticks and dip an onion ring into the batter, let the excess batter drain back into the bowl and add straight to the hot oil. Repeat with remaining onion rings but be careful to not over crowd the pan - this will suck the heat out of the oil and give you soggy onion rings!
Cook until golden brown, drain on paper towel and dust with a small amount of spice mix.
Serves 2, or 4 as a pre dinner snack
